CBD Laden Mint Cookies
CBD Laden Mint cookies are gluten–free, and something everyone can enjoy. We have a couple of them every day with our daily morning cup of coffee. Nothing like starting the day off with some CBD!
Note: While we’ve been conservative with our use of peppermint extract which gives the cookies that strong minty taste, some people may find that varying the amount slightly may help them fine–tune the cookies to their taste.
Ingredients
½ Cup Butter Flavored Coconut oil and 2 Tbsp of CBD Coconut Oil. Alternatively, you can also use regular coconut oil instead of it being butter flavoured.
¼ tsp salt
1 ¼ Cup Ground Flour on a 1-to-1 basis.
¾ Cup of Well Sifted Cocoa Powder
1 Cup Powdered Sugar, that’s well sifted
1 tsp Peppermint Extract
4-6 tbsp of water
Procedure
Start with preheating the oven to around 350 degrees. Then take two baking sheets and line them with parchment paper.
You then add coconut oil and the powdered buttered flavoured coconut oil in an electric mixer’s bowl. Turn on the mixer and beat it at a medium pace for around 2-3 minutes, or until you see that everything is mixed in well. You will want to make sure that there are no lumps in the mixture.
Take a small bowl and add cocoa powder, flour and salt in it. Then mix them together.
Turn your mixer on and set it to the lowest setting, then add some flour mixture (the one we made earlier) and a bit of water, i.e. 2 tbsp at a time. Then continue to add flour and water, until you’ve added all the flour. Hold on to the last 2 tbsp of water, until you see that the dough has turned into a ball. If it appears dry, then add the last bit of water.
Once that’s ready layout a piece of parchment paper and dust it with some cocoa powder. Now you turn out the dough. It will require kneading around 4 times on average for everything to be nice and smooth. Take your rolling pin and dust it with cocoa powder and start rolling the dough. Keep the thickness at around ¼”. But you can always roll it thinner if you want thinner cookies. Finally cut the dough using a 1 1/2” round cookie cutter.
Now place the cut dough in circles on the parchment paper. There should be a space of around
½” between them so that there is enough room for them to spread.
Bake them in a preheated oven for up to 14 minutes. They can then be cooled on a baking sheet for a couple of minutes, after which they are moved to a wire rack where they are cooled before being coated. Cooking with CBD is fun.
Coating Process
You’ll need 9 oz of Dark Chocolate, that’s chopped into small pieces
1 tbsp CBD Coconut Oil (you can also use regular coconut oil)
½ tsp of peppermint extract
You will want to start with melting the chocolate, and that can be done by putting it in a double boiler. Make sure to stir frequently until all the chocolate has melted. Then add the peppermint extract and coconut oil, and stir until they are mixed in well.
Now dunk every cookie into the mixture. Make sure to use a fork to remove the excess chocolate from the cookie with a couple of taps and let it drip away. Then place every cookie onto a baking sheet that’s covered with wax paper.
Once you’re done coating, all the cookies place them in a refrigerator. It takes around 30 minutes in the fridge for the chocolate to set.
Note: The above ingredients will make around 65 cookies on average. Use Mint Flavor CBD 500mg, 1000mg or 1500mg Wellen Products.
